


INGREDIENTS
// 2 c all-purpose flour
// 1¼ c granulated sugar
// 2 tsp baking powder
// 2 tsp baking powder
// ½ tsp salt
// 1/2 c milk
// 1/2 c milk
// 2 large eggs
// 1 tsp vanilla extract
// 2 c red currants // 1 tsp vanilla extract
// 1/2 c unsalted butter, melted
// sliced almonds, for decoration
// 3 tbsp cane sugar, for decoration
// 3 tbsp cane sugar, for decoration
DIRECTIONS
1. preheat oven to 350°F
2. whisk together flour, sugar, baking powder and salt
3. in another bowl put together milk, eggs and vanilla
4. pour wet ingredients over the dry and mix well
5. add melted butter and mix again. Slowly fold in floured red currants*
6. spoon the batter into the muffin tins, filling them evenly and top each with sliced almonds plus sugar
7. bake muffins for 45 min or until until a toothpick inserted in the center comes out clean
8. cool in the muffin tin for 10 min, then turn onto a wire rack to cool completely*

* prewashed red currants gently toss in a 2 tbsp of flour 8. enjoy! xo
* muffins are the best to eat next day, once the sour out of currants disappear

SESTAVINE
// 250 g moke
// 250 g sladkorja, v kristalih
// 2 žlički pecilnega praška
// 2 žlički pecilnega praška
// ½ žličke soli
// 125 ml mleka
// 125 ml mleka
// 2 jajci
// 1 žlička vaniljevega ekstrakta
// 300 g rdečega ribeza // 1 žlička vaniljevega ekstrakta
// 150 g neslanega masla, stopljenega (sama maslo stopim tako, da ga dam v mikrovalovno pečico za 1 min)
// nasekljani mandelji, za dekoracijo
// 3 žlice sladkorja, za dekoracijo
// 3 žlice sladkorja, za dekoracijo
POSTOPEK
1. pečico segrejemo na 180°C
2. skupaj zmešamo moko, sladkor, pecilni prašek in sol
3. v drugi posodi zmešamo mleko, jajci in vaniljo
4. suhim sestavinam dodamo mokre in dobro zmešamo dokler se ne povežejo
5. naši zmesi dodamo maslo in ponovno zmešamo. Počasi dodamo pomokan ribez*
6. tekočo zmes z žlico enakomerno razporedimo po kalupih za mafine in jih posipamo z mandelji ter sladkorjem
7. mafine pečemo 45 min oziroma dokler zobotrebec, ki ga zapičimo v sredino ne pride ven čist
8. pustimo, da se mafini v kalupih ohladijo (10 min) *

* predhodno opran ribez nežno povaljamo po moki (približno 2 velike žlice moke) 8. uživaj! xo
* mafini so najboljši naslednji dan, ko izgine pretirana kislost ribeza
