
Freedom. I want to be free. As soon as possible. I am jealous on my friends that are able to spend summer vacation od seaside and spend nights drunk in some hotel rooms. But here I am. Trying to finish my diploma paper in one week, spending my whole afternoons and evenings working on a job 40 min away from home and still trying to have a social life. Well it is basically impossible. Thinking how hard this is and it can not get worse, so the universe shows me how everything is possible, so it teaches me a lesson called "be careful what you wish for". I am trying to finish my diploma paper way earlier than all of my schoolmates because I am hoping I'll be able to join another college with next semester. And I am not even sure if I still want that. If i want to live on the other side of my country, far away from my family, my friends and my kitchen. I still have several days to think about this, but I guess changes are good, even if you cry at night first few weeks. But there is one thing that can make a girl happy, besides Ryan Gosling and new shoes...sugar! Sorry to all the skinny girls out there that keeps eating salads even on weekends but sugar helps. And so does European kitchen, like crepes!




INGREDIENTS
// 3 eggs
// 2 c flour
// 1 ¾ c milk
// pinch of salt
// 3,4 fl. oz. sparkling water
// berries, for decoration
// 1 ¾ c milk
// pinch of salt
// 3,4 fl. oz. sparkling water
// 2 tbsp oil
// greek yogurt, for decoration
// oil, for coatting the pan
// berries, for decoration
DIRECTIONS
1. in a large bowl mix eggs and slowly add flour, milk and salt. Add sparkling water and oil, beat until smooth. Leave the mix for 20 min
2. heat a lightly oiled pan over medium high heat and wait until it gets super hot. Pour the batter onto the griddle using half of soup scoop (1/4 c) for one crepe. In circular motion start tilting the pan until the batter coats the pan evenly
3. leave the crepe on one side for 2 min or until the bottom is lightly brown. Using spatula, turn and cook on the other side too
4. you can serve it with jam, sugar, lemon zest, nutella, fruit,... anything you want. Usually I use greek yogurt and top it with berries.
5. enjoy !

// 250 g moke
// 400 ml mleka

// 100 ml mineralne vode
// jagodičevje, za dekoracijo
// 400 ml mleka
// ščepec soli

// 2 žlici olja
// grški jogurt, za dekoracijo
// olje, za ponev
// jagodičevje, za dekoracijo
POSTOPEK
1. večji posodi z metlico stepemo jajca in jim nato počasi dodamo moko, mleko in sol. Dodamo mineralno vodo in olje ter vse skupaj zmešamo. Maso pustimo stati 20 min
2.
na ponev damo par kapljic olja in počakamo dokler ponev ni popolnoma vroča. Na ponev zlijemo maso za približno polovico zajemalke in ponev s krožnimi gibi obračamo, da se masa porazdeli po celotni površini
3.
palačinko pečemo približno 2 min oz. dokler spodnja stran ne postane rahlo rjava. Z lopatico palačinko obrnemo in pečemo še na drugi strani
4.
palačinko lahko postrežemo z marmelado, sladkorjem, limoninim sokom, nutello, sadjem... praktično vsem kar imamo radi. Lahko pa jih premažemo z grškim jogurtom in posujemo z jagodičevjem.
