Hi ! What’s the weather like over there buddy ?  I can’t believe how fast the weather can change. 2 days ago I was walking around in sandals and dress, but now I’m wearing ankle jelly booties, sweater, undershirt and a coat. My family and I were having a barbeque each day and eating meals on the terrace but now I’m stuck in my house with fluffy socks on my always-cold-as-an-ice feet. Having something sweet to eat while hiding under the blanket is an ultimate life saver and I believe these cookies are the best for that. In the recipe I used homemade Greek yogurt because I couldn’t find one in my local store but basically any kind of will work perfectly.  When I took cookies out of the oven my first thought was: “they’re ugly”, but then I tried them and I was in love.

INGREDIENTS
  • 2 cups all purpose flour
  • 1 1/2 tsp  baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 1/4 cup granulated sugar
  • 1 1/4 cups Greek yogurt (I used homemade one)
  • 1 egg – lightly beaten
  • 1 lemon – zested
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1 1/4 cup fresh blueberries

DIRECTIONS
1.  Preheat the oven to 375°F
2.  In a large mixing bowl combine flour, baking powder, baking soda, and salt. Whisk it together.
3.  In another mixing bowl whisk together sugar, yogurt, egg, lemon juice and zest, and vanilla extract. Mix until completely combined.
4.  Add the dry mix to the wet one and stir until no lumps remain. Slowly fold in the blueberries (we have to be careful not to smudge them)
5.  Put two tablespoon sized ball of batter on baking sheet with prepared parchment paper.
6.  Bake for about 13 minutes or until edges begin to get golden color. After they’re baked let them cool before you serve them.

SESTAVINE
  • 230 g moke
  • 1 1/2 čajne žličke pecilnega praška
  • 1/2 čajne žličke sode bikarbone
  • ščepec soli
  • 250 g sladkorja
  • 305 g grškega jogurta (jaz sem uporabila doma narejenega)
  • 1 jajce – rahlo zmešano
  • lupinica ene limone
  • 1 čajna žlička limoninega soka
  • 1/2 žličke vanilijevega ekstrakta
  • 200 g svežih borovnic
POSTOPEK
1.  Pečico segrejemo na 190°C
2.  V prvi posodi zmešamo skupaj moko, pecilni prašek, sodo bikarbono in sol.
3.  V drugi posodi zmešamo sladkor, jogurt, jajce, limonino lupinico, limonin sok in vanilijev ekstrakt.
4.  Mokrim sestavinam dodamo suhe in mešamo  dokler ne izginejo vse grudice. Počasi v zmes dodamo borovnice (pazimo, da jih ne zdrobimo).
5.  Na pekač z dodanim peki papirjem, postavimo grudice mase, ki naj bodo velikosti dveh žlic.
6.  Pečemo približno 13 minut oziroma do takrat, ko robovi rahlo pozlatijo. Ko so piškotki pečeni jih pohladimo ter postrežemo.
